Vin Jaune (literally: yellow wine) is the longest-lived wine in the
world and owes its distinctive taste to the Savagnin grape and a unique
wine-making process. The best comes from the village of Château-Chalon in the
Jura department. The unusual dessert wine vin de paille (literally: straw
wine) is produced by drying grapes for months on a bed of straw to yield the
concentrated juice required for this wine.
The area is also well known for its cheeses, which include Comté, Morbier,
Vacherin and Cancoillotte.
